Stay home this weekend and make your fish and chip takeaway in the kitchen to give you an even better reason to put your feet up in front of the telly with dinner!

This is your go-to recipe for the easiest tasty deep fried fish batter, using ingredients you probably already have in the cupboard! I've used it on cod, haddock and sea bass fillets, this recipe will be enough for 2 fillets.

You should also have a thermometer to test the temperature of the oil, it'll make frying your battered fish much more reliable and easier to measure.

In a medium sized saucepan, pour in some cooking oil. The width of your saucepan should not be smaller than your fillets, and make sure it'll hold both fillets without them being on top of each other.
Make sure the oil doesn't fill the saucepan more than halfway, to save hot splashes.
Put it on a low-medium heat.

On a plate or chopping board, sprinkle some salt on your fish fillets, and rub it in, on both sides. Leave the fillets for 10 minutes before padding dry with a piece of kitchen towel.

Meanwhile, you can make the batter.
In a bowl, mix up the flour, baking powder, cornflour and salt with a whisk, then add your cold water.
Whisk until combined and there are no lumps.

Your oil should now be at 200°C / 390°F.
Dunk your fish fillet into the batter, making sure it is covered both sides. Slowly dunk the battered fish into the hot oil, it will bubble up around the fish. Repeat for the second fillet.

It should only take a few minutes each side. You'll see it looking nice and golden and crispy.
Flip the fish over halfway through to get both sides even.
When you take them out, put them on a plate lined with kitchen towel to drain for a few minutes.

Enjoy!
