5 Ingredient No-Bake Flapjacks

Updated: 4 days ago
A quick and easy beautifully British snack to make, and lasts about a week without needing to put in the freezer (although you definitely can!).
Rich and buttery and sweet, with natural simple ingredients.
This recipe is my go-to, and easy to customise. With a layer of chocolate on top, sprinkled with something healthy (or not), or some nuts or raisins mixed into the mixture.
No oven needed! Just a stovetop or hob, or something to melt the ingredients, and the patience to wait for it to set.
Mix-ins & toppings to enhance your flapjacks
Below are some ideas to get you started, get creative and make something delicious!
Cocoa Flapjacks
If you want a subtle chocolate taste throughout your flapjack, without the chocolate topping, mix in 40g of cocoa powder with your other melting ingredients before adding the oats.
Chocolate Top
50-100g for just a drizzle, 150 for a solid coating.
I always go for dark chocolate because my bakes are usually already sweet enough, plus good quality dark chocolate contains fewer ingredients, and usually no artificial flavours.
Extra Toppings or Mix-in ideas
If you do add a chocolate topping, use 200g melted dark chocolate on the top. Here are some ideas of what you could also add on top of that, before it solidifies:
50g coconut flakes
50g chopped nuts - hazelnuts, peanuts or almond flakes are my favourites
Flaked salt - a sprinkle across, probably around 10g
30-50g freeze dried berries - raspberries work great, or banana chips

Peanut butter
Crunchy or smooth - up to you! I prefer to use crunchy because it's always in my cupboard, and I like a little crunch in the middle of the flapjack.
2
Chocolate topping
If you like a chocolate top to your flapjack, melt some dark chocolate (it's not as sweet as milk chocolate and makes a nice contrast). 50-100g for just a drizzle, or 150-200g for a solid coating of chocolate.

Notes

1
Line a baking tray or brownie tin of your choice.
I'm using a 9x9inch brownie tin, but you can use what you have. Don't worry about it - there's no even cooking to worry about!

2
Melt together the 250g butter, 220g brown sugar, 120g honey and 100g peanut butter in the largest saucepan you own. Stir it constantly with a wooden spoon or firm spatula so everything mixes evenly.

3
Once it's all melted together, take it off the heat and add your 550g of oats. Keep stirring until everything is nice and even.
(We use the largest saucepan so this step is much less messy!)

4
When you're ready, dump it all into your pre-prepared pan, and flatten it with the back of your spoon or firm spatula.

5
It should be cool enough to place it in the fridge now, but if it's not, leave it on the side until it's save to refridgerate. Leave it in there for about 4 hours, or until it is cool and firm.

6
Take the paper out of the tray, place it on a chopping board and slice into squares. Enjoy!
