I LOVE peanut butter. No doubt about that.

A quick and easy cookie, no need to wait overnight or leave them in the fridge or freezer. Just mix the ingredients, pop them in the oven, and devour!

Imagine eating a spoonful of peanut butter, but in cookie form, with more sugar.

Easily customizable peanut butter cookies, with added chocolate, nuts, or caramel.

1

Chocolate

You can use chips or a chopped bar, but dark is best!

2

Cookie scoop

If you don't have one, don't worry. It's easiest to portion these out with a scoop, but the mixture is easily mouldable with your hands, or you can use a spoon.

3

Sugar

I use granulated sugar, but you might prefer to use a finer caster sugar.

4

Storage

They're freezable! Once cool, you can pop them in an air tight container in the freezer, and get defrosted on the counter at room temperature.
Otherwise, they can be left at room temperature in a container or cookie jar for around 3 days (if they don't get devoured before then).

In a medium bowl, mix together the peanut butter, sugar and eggs. When it's mixed evenly, add your chocolate and mix it in so it's distributed well.

Using a 4cm cookie scoop (or a spoon, or your hands), put 10 cookie dough balls on each tray, staggered.
With the back of a spoon or spatula, squish them down to about a centimetre thick.
Sprinkle on some salt flakes on the top, then pat each cookie down a little to slightly embed the flakes.

Bake in batches for more even cooking, for 12-14 minutes. They should spread only a little, and the edges should be a nice golden brown.
The centre will still be a bit soft, leave them to cool on the trays.
