Potato Salad - Czech/European/Slavic/Olivier style

Updated: 3 days ago
Potato salad is a core dish in Eastern European home cooking, and it's traditional for every family to have their own unique recipe. This particular version is based on my late father's recipe, who always measured from the heart.
You might know this potato salad as a Czech or Slovak version, (eastern) European, Slavic, or Oliver style.
Please don't be offended if your family always included some other ingredients, everyone is different, and I encourage culinary exploration!
It's traditionally made at Christmas time, but I love it enough to regularly make it all year round.
My potato salad does take a bit of time in between steps, 3 evenings, eating on the third. But it's worth it, and it does taste better after a few days in the fridge, trust me.
No oven needed! Just a stovetop or hob, a fridge, and a lot of patience.
This will give you a big bowl - about 2.5-3kg of potato salad. No one will go hungry!

Notes

1
Day One - Boiling:
Peel your potatoes, carrots and parsnips, and if needed, cut them down so they are similar sizes to each other.
Boil the potatoes, carrots, parsnips and eggs in separate saucepans. You can do this one at a time, or all on different burners simultaneously if you feel confident.
The vegetables will need to be boiled enough to not be mushy and still hold their shape. When poked with a butter knife, they should give a bit of resistance, but you should be able to push the knife through about halfway.
The eggs need to be hardboiled for 10 minutes.

2
Day Two - Chopping:
Chop the potatoes, carrots, parsnips, and eggs into about 1cm cubes. You can use a vegetable cube cutter tool (linked) to speed up this process.
The gherkin and onion need to be chopped finely.
The peas or petit pois, if frozen, should also come out to be defrosted so they're at room temperature.
You can add all of your vegetables to a large bowl as you go.

3
In your large bowl should be - cubed potatoes, cubed carrots, cubed parsnips, cubed eggs, chopped onion, chopped gherkin, and peas.
Mix it all up with your hands, while making sure all individual pieces are separated.

4
To this bowl, add your mayonnaise, gherkin juice (from the pickle jar they came in), salt and pepper.
Mix thoroughly with a large spoon, making sure everything is distributed evenly.
Scrape down the sides of a bowl with a spatula and press everything down. This will prevent too many air gaps and ensure that all the flavours blend and ferment together.
Cover with cling film and leave in the fridge until tomorrow.

5
Give it a little mix around and then it's time to eat!
The longer this stays in the fridge, the better it tastes (up to a point). So whatever you don't eat today, cover and put back in the fridge for tomorrow. You might need to downsize the containers as you go.
Serve with bread or as a side to a main meal, and dobrou chuť!
